Chicken is always a quick and easy dinner option, but it can also get boring if you reuse the same recipes over and over again. I’m always on the hunt for new chicken recipes to add to my collection.
Tonight’s dinner comes from Giada’s Feel Good Food by Giada de Laurentiis. I got this cook book last Christmas and love it! It’s full of light breakfast, lunch, dinner and snack recipes.
Lemon Cumin Chicken
- Boneless skinless chicken breast
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 2 garlic cloves, minced
- 1 TBSP ground cumin
- 1 tsp kosher salt
- 1/4 tsp crushed red pepper flakes
If you have the time, it’s great to let the chicken marinate for a couple hours or overnight. When I’m running low on time (which is most of the time) I’ll poke some holes in the chicken with a fork and let it sit for at least 20 – 30 minutes.
I pan seared my chicken, but baking or grilling would work well for this too.
The greatest aspect I found about this recipe is it’s versatility. While the recipe called it to be paired with pesto, the flavors of the lemon and cumin, mixed with the heat from the red pepper flakes lend this to be able to be paired with a lot of different sides. I think this could be great with the pesto or a light lemon olive oil sauce on pasta; chopped up in tacos with some salsa or as a grilled chicken sandwich with lettuce and tomato. I paired mine with a simple Greek salad.
