Fajitas, like tacos, are such a versatile food because there are so many different recipes for it and ingredients you can include. I also like it because I can get almost all of the food groups into one tasty tortilla. Knowing I’ll be making turkey and chicken the rest of the week, tonight I decided to make quick and easy steak fajitas.
- Cubed steak round (about 3 oz per fajita)
- 1 yellow onion, sliced thin
- 1 pepper, stemmed, seeded, and sliced thin
- 1 TBSP lime juice
- 1 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp hot sauce
Slice your peppers and onions and get those cooking down in a skillet on medium heat. While the vegetables are cooking down, season your cubed steak with the lime juice, chili powder, cumin, hot sauce, salt and pepper and let sit for a few minutes to marinate. Feel free to add more hot sauce and chili powder if you’d like to add a little more heat to your dish.
Once the peppers and onions have started to brown, add your cubed steak to your skillet and cook through.
Serve your fajitas with whatever toppings you’d like! Salsa, pico de gallo, cheese, guacamole, sour cream – the options are endless!
