Pizza Cups

After being out of town for two weeks, J. and I decided to have people over for the Superbowl last weekend to catch up with friends (and to force us to clean our house!) Using some influence from our trip as well as wanting some easy finger foods, I took inspiration from a pizza bites recipe by Fox and Briar.

Pizza Cups

  • 24 wonton wrappers
  • 8 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 cup pizza sauce
  • 3 TBSP minced garlic
  • 1 tsp dried oregano
  • Any toppings you’d put on regular pizza!

Heat oven to 350 F.

Spray a muffin tin with cooking spray and press wonton wrappers into the cups (2 to each cup), overlapping the corners so that the edges of each tin is covered. Spray the wontons with cooking spray and bake for about 5 minutes, until the bottoms start to get crispy.

Mix cream cheese, oregano, and minced garlic together. (Let the cream cheese sit on the counter for a few minutes to soften – it makes it easier to mix all the ingredients together.)

Remove wontons from oven, evenly divide the cream cheese mixture in each cup. Top cream cheese with a pinch of parmesan, then about 1 tablespoon of shredded mozzarella. Top with about 1 tablespoon of marinara, then another pinch of parmesan, another tablespoon of mozzarella. Top with whatever your favorite pizza topping is – I’d just recommend chopping it up into bite size pieces – this is a mini pizza cup after-all!

Bake for about 15 more minutes until all the cheese gets melty and delicious!

P.S. These are also great as leftovers! Just throw them back in the oven for another 15 minutes.
