Parmesan Crusted Salmon

I’ve never been a huge fan of cheese and fish together. Just something about it always just seemed a little off. However, I stumbled across this recipe from Publix and decided to give it a try. To my surprise, this is one of the best fish recipes I’ve ever had, let alone made and I’m so excited to share it.

Parmesan Crusted Salmon

  • 2 salmon fillets (around 5 oz each)
  • 1/2 cup panko bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 egg white
  • Salt
  • Pepper

Preheat oven to 425°F. Trim fish as needed to cut the fillets.

In a bowl, mix together the panko bread crumbs and Parmesan cheese. In a separate bowl, separate an egg white and whisk heavily to create a froth.

Season your fillets with salt and pepper. Dip fish into egg mixture then coat all sides of fish with bread crumb mixture. Place in a oven-friendly container and bake for about 15 minutes.

I served this with pan-seared asparagus (with lemon juice and Parmesan cheese). This salmon turned out so crunchy and delicious. The Parmesan cheese actually tempered the “fishy-ness” of the salmon and the crusted panko added a wonderful texture to the flaky fish. I can’t wait to serve this again and again – and to try it on chicken!
