Chocolate Peanut Butter Sandwich Cookies

So a couple weeks ago I shared my recipe for my favorite peanut butter cookies. Now, in honor of National Peanut Butter and Chocolate Day, I figured it was time to take that classic cookie recipe up a notch (or five!) with *drumroll please* – chocolate peanut butter sandwich cookies!

Chocolate Peanut Butter Sandwich Cookies

Start with my peanut butter cookie recipe. After baking, make sure these cool completely before attempting to fill them. I baked mine the day before for Father’s Day, then the next day used a couple leftover cookies to make these fun dessert sandwiches.

Peanut Butter Filling

  • 1/2 stick unsalted butter, softened
  • 1/3 cup creamy peanut butter (I used JIF Natural)
  • 1 cup powdered sugar
  • 3 TBSP heavy cream

Chocolate Filling

  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 1/8 tsp salt

Notes: If you didn’t have time to soften your butter, place the stick in a microwave-safe dish and microwave for about 10 seconds to soften. Before measuring the peanut butter, spray the measuring cup with nonstick spray to help keep the peanut butter from sticking quite as much. 

In a large bowl, mix together your softened butter and peanut butter with a hand mixer. Once combined, add in the powdered sugar and heavy cream and mix until smooth.

In another large bowl, add the cocoa powder and salt. Use a hand mixer to mix in the heavy cream and vanilla. Slowly add in the powdered sugar a little at a time and mix until smooth.

Use a  knife to schmear peanut butter filling on the bottom of one cookie. Then use another knife to schmear chocolate filling on the bottom of a second cookie and sandwich the two pieces together. Let these cookies set in the fridge for a few minutes to let the filling firm up. Then enjoy!

These treats are pretty messy – but the most delicious things usually are!

P.S. The peanut butter filling also goes great with a little strawberry or grape jelly for a sweet take on a PBJ!
